None of these are my creation, they are from the Tastefully Simple Recipe Search.  There are great to make ahead & freeze for easy baking.  I hope you enjoy the recipes!!

1. Pumpkin Spice Cranberry Cookies

Ingredients
Pumpkin Spice Bar Mix
2 eggs
6 Tbsp. melted butter
1/2 cup dried cranberries
1/2 cup chopped pecans

Directions
Preheat oven to 350°. Combine ingredients; stir until dough forms. Place rounded spoonfuls of dough onto a lightly greased baking sheet. Bake 17-20 minutes or until set. Makes about 2 dozen cookies.


 2. Amaretto Pinwheel Cookies

Ingredients
Awesome Amaretto™ Cheese Ball Mix
8 oz. softened cream cheese
1 Pillsbury® seamless dough sheet
1/2 cup mini chocolate chips

Directions
Combine the first 2 ingredients and spread on the dough sheet leaving a 1/2 inch gap around the edges. Sprinkle with chocolate chips. Roll up; jelly-roll style. Wrap with waxed paper and refrigerate for 3 hours or overnight. When ready to bake, preheat oven to 350°. Remove waxed paper and slice in 1/4 inch slices. Bake on a parchment sheet lined cookie sheet for 12-14 minutes. Makes 2 dozen cookies. 


3. Chai Cream Cheese Cookies

Ingredients
1 cup (2 sticks) softened butter
8 oz. softened cream cheese
1/4 cup Oh My! Chai®
2 cups sugar
2 1/2 cups flour
1/2 tsp. salt
1 tsp. vanilla extract
1/2 cup chopped pecans

Directions
Cream butter and cream cheese until fluffy; stir in sugar and 
Oh My! Chai® . Stir in remaining ingredients. Roll into 1-inch balls; place on baking sheet. Bake at 350° for 16-18 minutes or until edges just begin to brown. Don’t over bake. Makes 5-6 dozen cookies.

4.Chocolate Almond Pound Cake Cookies

Ingredients
Absolutely Almond Pound Cake Mix
1 egg
1/2 cup (1 stick) very soft butter
Chocolate almond bark
Sliced almonds for garnish

Directions
Preheat oven to 350°. Combine first 3 ingredients; roll into generous 1-inch balls. Place 2 inches apart on greased baking sheet. Bake for 15 minutes or until lightly browned. Cool completely. Melt chocolate almond bark as directed on the package. Dip one-half of each cookie into the melted chocolate; place on waxed paper or a lightly greased baking sheet. Sprinkle with almonds. Repeat with remaining cookies. Makes 8-10 servings. 


5. Chocolate-Dipped Citrus Cookies

Ingredients
Citrus Sugar Cookie Mix
1/2 cup (1 stick) softened butter
1 egg
4 oz. semisweet or bittersweet chocolate, melted and cooled to room temperature
Optional toppings (such as crushed nuts, candied orange zest, sprinkles or crushed candies)

Directions
Combine Citrus Sugar Cookie Mix Packet 1 with butter and egg until dough forms. Shape into a disk; wrap in plastic wrap and chill for at least 1 hour or up to 3 days. Preheat oven to 375°. Divide dough in half. On a floured surface, roll each piece into a rectangle about 1/4-inch thick. Cut into 2-inch squares, and transfer to greased baking sheets. Bake about 6-8 minutes, until just beginning to brown. Cool slightly; transfer to wire racks to cool completely. Dip one half of each cooled cookie into melted chocolate. Place on waxed paper, and sprinkle with any desired toppings. Chill until chocolate is set, about 25-30 minutes. Store in an airtight container at room temperature for up to 3 days. Makes about 30 cookies.
 


6. Citrus-Cherry-Almond Jumbles

Ingredients
Citrus Sugar Cookie Mix
1/2 cup (1 stick) softened butter
1 egg
1 cup dried cherries, chopped
1 cup sliced almonds

Directions
Preheat oven to 375°. Combine Citrus Sugar Cookie Mix Packet 1 with butter and egg until dough forms. Fold in cherries and almonds; stir. Drop by spoonfuls onto greased baking sheets. Bake about 7-9 minutes, until just beginning to brown. Cool slightly; transfer to wire racks to cool completely. Makes 28-32 cookies. 


7. Fudge and Peanut Butter Chip Cookies

Ingredients
Truffle Fudge Brownie Mix
1/4 cup (1/2 stick) melted butter
4 oz. softened cream cheese
1 egg
1 cup peanut butter flavor baking chips

Directions
Beat first 4 ingredients with a spoon until well blended. Stir in peanut butter chips. Form into 1-inch balls; place 2-inches apart on ungreased 10X15 pan. Flatten slightly. Bake at 350° for 10-14 minutes or until edges are set. Cool slightly; transfer to rack. Makes 24 cookies. 


8. Gluten-Free Fudgy Crinkle Cookies

Ingredients
Gluten-Free Fudgy Brownie Mix
2 eggs
2 tsp. water
1 cup powdered sugar

Directions
Combine first 3 ingredients; dough will appear dry and crumbly. Cover and refrigerate 1 hour. With moistened hands, shape dough into small 1-inch balls; roll in powdered sugar. Place on a lightly greased baking sheet; bake at 350° for 9-11 minutes. Cool. Makes 24 cookies.

9. Holiday Citrus Cut-out Cookies

Ingredients
Citrus Sugar Cookie Mix
1/2 cup (1 stick) softened butter
1 egg
1 can white frosting (such as cream cheese, vanilla or buttercream)
Decorating sugar or sprinkles, optional

Directions
Preheat oven to 375°. Combine Citrus Sugar Cookie Mix Packet 1 with butter and egg until dough forms. Divide dough in half. On a floured surface, roll each half out to about ¼-inch thickness. Cut into holiday shapes with cookie cutters, and place on greased baking sheets. Bake about 5-7 minutes, until just beginning to brown. Cool slightly; transfer to wire racks to cool completely. Frost cookies, and decorate with colored sugar or sprinkles as desired. Makes about 20-24 cookies.
 


10. Key Lime Tea Cookies

Ingredients
Key Lime Cheese Ball Mix
8 oz. pkg. softened cream cheese
12 oz. box Vanilla Wafer cookies
1/2 cup raw sugar

Directions
Combine contents of Packet 1 with cream cheese. Spread a teaspoon of mixture onto the flat side of a cookie; top with another cookie. Roll edges of filled cookies in raw sugar or contents of Packet 2. Makes about 25 cookies.
 


11. Oh My! Chai Cookies

Ingredients
1 2/3 cup sugar, divided
1 cup (2 sticks) softened butter
1 egg
2 Tbsp. milk
1 tsp. vanilla
3 cups flour
2 tsp. baking powder
6 Tbsp. Oh My! Chai®, divided

Directions
Combine 1 cup sugar and butter; beat at medium speed until creamy. Add egg, milk and vanilla; continue beating until well mixed. Reduce speed to low; add flour, baking powder and 4 tablespoons Oh My! Chai®. Continue beating until well mixed. Divide dough in quarters; shape each quarter into an 8-inch log. Wrap in plastic wrap; refrigerate until firm, 1 to 2 hours. Combine remaining sugar and Oh My! Chai®; blend well. Slice logs into 1/8-inch slices; place 1 inch apart on ungreased baking sheet. Bake at 375° for 7-9 minutes or until edges begin to brown; cool 2 minutes. Sprinkle cookies with sugar and Chai mixture while warm; cool completely. Sprinkle cookies again when cool. Makes 12 dozen cookies.
 


12. Orange-Glazed Citrus Cookies

Ingredients
Citrus Sugar Cookie Mix
1/2 cup (1 stick) softened butter
1 egg
1 cup confectioners’ sugar
2 Tbsp. orange juice
1 tsp. finely grated orange zest

Directions
Combine Citrus Sugar Cookie Mix Packet 1 with butter and egg until dough forms. Divide dough in half, and form into small rectangular logs (about 1 x 1 1/2-inch). Chill until firm. Cut into slices about 1/4-inch thick, and place on greased baking sheets. Preheat oven to 375°. Bake about 6-8 minutes, until just beginning to brown. Cool slightly; transfer to wire racks to cool completely. In a small bowl, combine confectioners’ sugar, orange juice and zest; spread or drizzle over cookies. Makes 20-24 cookies.
 

Cranberry Turkey Pinwheels

Cranberry Turkey Pinwheels

  • Yield: 8-10 Servings

Ingredients

  • Garden Pepper & Feta Cheese Ball Mix
  • 8 oz. Neufchatel cheese (1/3 less fat than cream cheese)
  • 2 Tbsp. milk
  • 1/4 cup Craisins® chopped
  • Flatbread roll-ups
  • Turkey meat thinly sliced or chopped
  • American cheese thinly sliced

Instructions

Prepare cheese ball as directed on package. Add in milk to thin out. Refrigerate while preparing the other items; approximately 20-30 mins. Chop up Craisins® and add to cheese ball mixture. Spread flatbread out. Spread cheese ball mixture over top and all the way to the edges. Add a thin layer of turkey; leave about ¼” to ½” around the edges of the wrap. Repeat with cheese. Start at one of flatbread end and roll. Lay seam-side down on a large plate. Repeat with as many pieces of flatbread as you’d like to prepare. Cover and refrigerate for 30 minutes or until ready to slice. Slice pinwheels into ½” – 1” slices and place on platter.

Tips & Hints

• The cheese ball comes with two packets so you can double the recipe and make a whole bunch if you need them. Great value!
• I chose flatbread because it has a rectangular shape and it’s very easy to work with, but you could also use tortillas.
• A serrated knife worked best to slice through these.
• Use leftover spread and other ingredients (or Thanksgiving leftovers) to make wraps for a fabulous lunch. I added some lettuce and tomato to mine!
• The cheese ball spread (with cranberries) is also excellent on crackers and bagels!

Sweet Mesquite Turkey Slew


We are grateful for modern, tasty ways to put Thanksgiving leftovers to use.  

Sweet Mesquite Turkey Stew

  • Yield: 6-8 Servings

Ingredients

Instructions

Place all ingredients in slow cooker, stir, and cook on low for 3-6 hours. Serve with Bountiful Beer Bread or Perfect Parmesan Biscuits.



Tips & Hints

• Bake (or cook) a few extra potatoes on Thanksgiving, so you can use the leftovers in this recipe.
• Feel free to use frozen potatoes and/or carrots – microwave as directed, then toss ‘em in the slow cooker.
•This can also be made on the stove top – simply combine all ingredients in a large pan and simmer until heated through.
• I prefer the slow cooker method to the stove top method. Even though everything is already cooked, the flavors blend beautifully when you give this a nice, slow simmer.

Deep Dish Quiche Pizza (Pizza without all the carbs was a hit at my house!)

Deep Dish Quiche Pizza
This was my first go at crustless (so to speak) pizza.  It had great flavor, almost no carbs & can be customized to your families favorite toppings!  I cooked it for about half the cooking time for both cooking steps. I didn't have Italian blend cheese so I made my own by adding Italian Garlic Bread Seasoning to my cheese.  I'm a big fan of using up what is on hand.

4 oz. cream cheese, softened
3 eggs
1/4 cup Parmesan cheese
1/3 cup heavy cream
1/2 tsp. oregano
1 tsp. Garlic Garlic
2 cups shredded Italian blend cheese
15 oz. can pizza sauce
1 cup mozzarella cheese, shredded
20 slices (2 oz) pepperoni

Beat first 2 ingredients with mixer until
smooth. Add next 4 ingredients; blend. In a
greased 9 x 13 baking dish place the Italian
blend cheese; top with egg mixture. Bake at
375° for 30-40 minutes or until well
browned. Remove from oven and cool 10
minutes. Before serving spread on pizza
sauce, sprinkle with mozzarella and layer
with pepperoni. Bake an additional 10
minutes at 375° until toppings are warm and
cheese is slightly browned. Makes 6-8
servings.

rounds with a 1¾-inch cookie cutter. Place on greased
baking sheets, and bake 5-7 minutes, until just beginning to
brown. Cool slightly; transfer to wire racks to cool completely.
Spread a generous amount of chocolate-hazelnut spread
on the flat side of half the cookies; top with another cookie
to make a sandwich. Sprinkle with confectioners’ sugar.
Makes about 24 cookie sandwiches.

Potato Pancakes

I will admit that I just came across this & haven't actually tried it yet.  That being said I'm super excited to get to it in the next few days.  I'm a big fan of helping the environment, going meatless (even one day a week) is more beneficial to the environment than reducing water usage or recycling. Never realized fish could be so good.

So I've never really tried fish as an adult.  My experience with fish as a child was that it was stinky with a gross texture and taste.  However during this weeks meal planning a fish dish was picked out, I agreed with reluctance.  Needless to say it wasn't so bad, in fact I'd eat it again!  We tried out the Sicilian Saute which not only called for fish but zucchini & squash. If you know me, you know that I don't eat a wide selection of vegetables so this recipe was really pushing my limits.


Best of all the house doesn't stink!!

Sicilian Saute

Ingredients
2 Tbsp. olive oil
1 Tbsp. Mama Mia™ Marinara Sauce Mix
1 zucchini, sliced
1 yellow summer squash, sliced
1 cup cherry tomatoes, halved
2 lbs. white fish fillets (tilapia, orange roughy, etc.)
Prepared hot linguine pasta
Shredded Parmesan cheese

Directions
Heat olive oil over medium-high heat in a large skillet; add Mama Mia Marinara Sauce Mix, zucchini and summer squash. Saute for 2-3 minutes or until vegetables are crisp-tender; stir in tomatoes. Heat through; remove vegetables, keeping all the liquid in the pan. Cook fish in hot skillet, turning once until fish flakes easily, about 5 minutes. Add vegetables back into the skillet; heat through. Serve fish and vegetables with hot pasta; garnish with Parmesan cheese. Makes 6 servings.
