Chicken & Bacon Club Pizza

Ingredients
1 tube refrigerated pizza crust
Garden Pepper & Feta Cheese Ball Mix
8 oz. softened cream cheese
1/4 cup mayonnaise
1 1/2 cups finely chopped, cooked chicken
8 slices bacon, cooked and crumbled
1/2 cup shredded Colby Jack cheese
1 1/2 cups finely shredded lettuce
1 tomato, finely chopped
2 Tbsp. milk
Directions
Preheat oven to 400°. Unroll pizza dough and press into a greased 10 x 15 baking sheet. Bake 10 minutes. Combine cheese ball mix with cream cheese and mayonnaise; spread on pizza crust, reserving about 1/4 cup for topping. Sprinkle pizza with chopped chicken, bacon and shredded cheese. Bake 10 minutes or until crust is golden brown. Remove from oven; top with lettuce and tomato. In a small bowl, thin reserved cheese ball mixture with 2 Tbsp. milk; stir and drizzle over pizza. Makes 6 servings.

Ingredients
Garden Pepper & Feta Cheese Ball Mix
8 oz. softened cream cheese
4 large tortillas
8 slices deli turkey
10 slices Swiss cheese
Spring mix lettuce (optional)
Directions
Prepare Garden Pepper & Feta Cheese Ball Mix as directed, chill 2 hours. Remove from fridge and allow to soften so it is spreadable. Spread over each tortilla; all the way to the edge. Layer with turkey, cheese and lettuce. Tightly roll each tortilla sealing the edge with cheese ball mix. Cut off uneven edges and cut remainder into 1 inch slices; serve immediately. Makes 20 servings.

Sneaky Margherita Pizza
Thought I would share this great recipe from the Tastefully Simple blog
Sneaky Margherita Pizza
Yield: 4-6 Servings
Ingredients
- 1 lb. eggplant peeled and sliced into rounds, 1/4 inch rounds
- 2 Tbsp. Roasted Garlic Infused Oil
- 1/2 tsp. salt
- 2 tsp. Mama Mia™ Marinara Sauce Mix
- 8 oz. tomato sauce
- 8 oz. mozzarella cheese fresh or shredded
- 10 basil leaves chopped
Instructions
- Blend
the marinara mix with the tomato sauce. Preheat oven to 350°. Place
the eggplant slices on a baking sheet; prick with a fork and sprinkle
with salt. Let stand 30 minutes, to reduce bitterness and release some
of the water. Brush with oil and bake for 10 minutes. Then flip the
eggplant slices, brush with oil and bake for another 10 minutes. Remove
the slices from the oven, top with prepared tomato sauce, chopped or
shredded cheese and a little fresh basil. Return to oven for 10 more
minutes.
Tips & Hints
• You don’t have to peel the eggplant…but if you do, you will dramatically increase the odds that your kids won’t notice the eggplant crust!• There are just 35 calories in a cup of eggplant…so you can eat LOTS of this pizza without worry!
• Feel free to add any of your favorite pizza toppings – we made some with chopped olives and some with roasted red pepper. Delish!
• Warm any leftovers the next day in a non-stick pan.

Game Day Food Safety!
Wash hands & work surface with hot, soapy water before
& after handling food.
Wait until guests have arrived before setting out the hot
& cold foods.
Keep hot foods hot & cold foods cold.
Always thaw meats, such as meatballs & wings, before
putting them into the slow cooker.
Use a food thermometer to be sure meat & poultry are
safely cooked.
Rotate foods throughout your party to help keep everything
at proper temperatures.
Arrange & serve food on several small platters rather
than on one large platter.
Keep foods cold by nesting dishes in bowls of ice.
Foods should not sit at room temperature for more than two
hours. Discard anything on the buffet
that has been out for more than two hours.
Freeze or refrigerate leftovers within two hours of
originally setting them out.

Game day suggestions!
Serve a veggie tray with prepared Spinach & Herb Dip,
Fiesta Party Dip, Spicy –Four Pepper Dip or Bacon Bacon.
Pour Bayou Bourbon Glaze over cocktail wieners; keep warm in
slow cooker.
Brush Pomegranate Chipotle Sauce on bacon wrapped ware
chestnuts or cubed chicken; grill or broil until bacon is crisp.
Bake a couple of loves of Bountiful Beer Bread so you can
serve it cubed with any of our dips.
Make a double match of Chipotle Bacon Dip for a big crowd;
serve with Blue Aztec Chips.
Serve Wahoo! Chili with Perfect Parmesan Biscuit.

Mama Mia Chicken Fingers

Ingredients
3 Tbsp. Mama Mia™ Marinara Sauce Mix, divided
2 eggs
1 cup unseasoned dry breadcrumbs
1/2 cup shredded Parmesan cheese (not grated)
1 1/2 lbs. boneless, skinless chicken breast, cut into 1" x 3" strips
Salt & pepper to taste
15 oz. can tomato sauce
Directions
Serve it tonight: Preheat oven to 350°. Add 1 tablespoon Mama Mia Marinara Sauce Mix to eggs; beat until foamy. Place egg mixture in a shallow dish; place dry breadcrumbs in a second shallow dish. Add Parmesan cheese to breadcrumbs. Coat chicken strips with egg mixture; dredge in breadcrumb mixture. Place chicken fingers on a greased baking sheet; season lightly with salt and pepper. Bake 20 minutes or until no longer pink in the middle. Turn halfway through baking to brown evenly. While chicken fingers bake, combine remaining Mama Mia Marinara Sauce Mix and the tomato sauce in a medium sauce pan. Simmer 10 minutes. Serve marinara sauce for dipping. Makes 6 servings.
Serve it later: Place coated, uncooked chicken fingers on a greased baking sheet; freeze solid. Place chicken fingers in a resealable plastic bag. Freeze until ready to use. No need to thaw. Bake at 350° for 30-40 minutes or until no longer pink. Prepare Mama Mia Marinara Sauce for dipping while chicken bakes
