Chicken Cordon Bleu Casserole





Chicken Cordon Bleu Casserole

Ingredients
Creamy Wild Rice Soup Mix
3 1/2 cups water
2 Tbsp. Onion Onion™
1 1/2 cups shredded Swiss cheese, divided
2 cups cooked, cubed chicken breast
1 cup cubed ham
Perfect Parmesan Biscuit Mix
1/2 cup cold water

Directions
Combine first 3 ingredients; simmer, covered, 30 minutes. Combine 1 cup Swiss cheese, chicken and ham in a greased 2 1/2 quart casserole dish; stir in prepared soup. Combine Perfect Parmesan Biscuit Mix, 1/2 cup water and remaining cheese; stir to blend. Dollop spoonfuls of biscuit dough over hot soup mixture. Bake, uncovered, at 350° for 40-45 minutes or until bubbly and the biscuits are browned. Makes 8-10 servings.

What exactly is Wild Rice you ask?

What is Wild Rice? 

Although not related to Asian rice because it’s actually the grain of a grass, it became know as wild rice because explorers saw Native Americans gathering it in the waters of the Great Lakes & it reminded them of rice paddies. Cooked wild rice has a rich nutty flavor, sometimes described as a smoky flavor & texture that is slightly chewy. Native Americans harvest wild rice by canoeing into a stand of plants, bending the ripe grain heads with wooden sticks called knockers & then threshing the seeds into the canoe.

Creamy Wild Rice Soup - Product of the week - Winner winner chicken dinner





This weeks product of the week is Creamy Wild Rice Soup, its Comfort food at its finest. Just add hot water for a creamy soup brimming with wild rice, veggies and almonds. Serve with warm Bountiful Beer Bread or PerfectParmesan Biscuits. Makes about 5 servings.

Cook: 45 mins

With just five ingredients, it’s super easy to make, and the rice, chicken and stuffing mix are the kinds of simple comfort food your family will love.

Ingredients
5 cups hot water
16 oz. pkg. seasoned stuffing mix
6-8 chicken breats boneless, skinless
1/2-1 cup Swiss cheese shredded

Instructions
Prepare Creamy Wild Rice Soup Mix as directed on package with water; simmer 45 minutes. Remove from heat. In a large bowl, combine stuffing mix with 3 cups prepared soup; toss to mix well. Set aside. In 3-quart oblong baking pan, arrange chicken. Pour remaining soup over chicken. Spoon stuffing mixture over top. Cover and bake at 350° for 35 minutes. Uncover; cook additional 10 minutes or until chicken is no longer pink and stuffing is lightly browned. Sprinkle with cheese. Makes 6 servings.

Tips & Hints
•You need a big bowl to mix it up and your 9 x 13 pan will be quite full.

Chicken & Bacon Club Pizza

Ingredients
1 tube refrigerated pizza crust
Garden Pepper & Feta Cheese Ball Mix
8 oz. softened cream cheese
1/4 cup mayonnaise
1 1/2 cups finely chopped, cooked chicken
8 slices bacon, cooked and crumbled
1/2 cup shredded Colby Jack cheese
1 1/2 cups finely shredded lettuce
1 tomato, finely chopped
2 Tbsp. milk

Directions
Preheat oven to 400°. Unroll pizza dough and press into a greased 10 x 15 baking sheet. Bake 10 minutes. Combine cheese ball mix with cream cheese and mayonnaise; spread on pizza crust, reserving about 1/4 cup for topping. Sprinkle pizza with chopped chicken, bacon and shredded cheese. Bake 10 minutes or until crust is golden brown. Remove from oven; top with lettuce and tomato. In a small bowl, thin reserved cheese ball mixture with 2 Tbsp. milk; stir and drizzle over pizza. Makes 6 servings.

Ingredients
Garden Pepper & Feta Cheese Ball Mix
8 oz. softened cream cheese
4 large tortillas
8 slices deli turkey
10 slices Swiss cheese
Spring mix lettuce (optional)

Directions
Prepare Garden Pepper & Feta Cheese Ball Mix as directed, chill 2 hours. Remove from fridge and allow to soften so it is spreadable. Spread over each tortilla; all the way to the edge. Layer with turkey, cheese and lettuce. Tightly roll each tortilla sealing the edge with cheese ball mix. Cut off uneven edges and cut remainder into 1 inch slices; serve immediately. Makes 20 servings.

Sneaky Margherita Pizza

Sneaky Margherita Pizza 

Yield: 4-6 Servings

Ingredients

Instructions

  1. Blend the marinara mix with the tomato sauce. Preheat oven to 350°. Place the eggplant slices on a baking sheet; prick with a fork and sprinkle with salt. Let stand 30 minutes, to reduce bitterness and release some of the water. Brush with oil and bake for 10 minutes. Then flip the eggplant slices, brush with oil and bake for another 10 minutes. Remove the slices from the oven, top with prepared tomato sauce, chopped or shredded cheese and a little fresh basil. Return to oven for 10 more minutes.

Tips & Hints

• You don’t have to peel the eggplant…but if you do, you will dramatically increase the odds that your kids won’t notice the eggplant crust!
• There are just 35 calories in a cup of eggplant…so you can eat LOTS of this pizza without worry!
• Feel free to add any of your favorite pizza toppings – we made some with chopped olives and some with roasted red pepper. Delish!
• Warm any leftovers the next day in a non-stick pan.
